Elotes Casserole Mix

Directions: Add mix to 3 1/2 cups milk(low-fat, fat free, soy, etc.) & 16 oz frozen corn. Cook approximately 10 minutes on medium high, stirring frequently. Add 1 can of chicken or 1 cup rotisserie chicken and 1 cup mexican style sour cream or crema. Stir well. Pour in 8x8 casserole dish. Top with crema or queso fresco or parmesan cheese. May also be topped with crispy crumbled bacon & cilantro.

Ingredients: Rice, cilantro, cornstarch, cumin, chili, sugar, tajin(chili peppers, sea salt, dehydrated lime juice, silicon dioxide[to prevent caking]), onion, garlic, jalapeno & selected spices.
